This Coffee is located on in the southwest part of Guatemala. The
Huehuetenango coffee faces towards the west on the pacific slopes of
Guatemala. This region is one of Guatemala's best coffee producing
regions. The coffee is grown at an altitude of 4,600 to 5,500 feet
above sea level. This region receives less rain through out the year
because of its location. Its rainy season is between the months May
and October. The dry season is between the months of November and
April. The rich volcanic soil
is ideal for growing coffee. The coffee is harvested between the
months of October and March. The coffee is hand picked and prepared
using the wet method. The coffee is then dried out on patios for
about two to three weeks. The coffee is also dried using drums
fueled by wood or parchment. The
coffee is then exported between the months of October and June. The
Huehuetenango bean is known as Strictly Hard Bean (SHB). The coffee
has a lively acidity and a medium body, with a smoky flavor.
